Poha
A light, flavourful breakfast of flattened rice with onions, potatoes, peanuts, turmeric and coriander.

Poha comes together quickly and works equally well as breakfast or an evening snack.

- 2 cups thick poha
- 1 onion, finely chopped
- 1 potato, diced small
- 2 tbsp roasted peanuts
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 8–10 curry leaves
- 1–2 green chillies
- ¼ tsp turmeric powder
- 1 tbsp oil
- Salt and a pinch of sugar
- 2 tbsp coriander and 1 tbsp lemon juice
Method
- Rinse the poha. Place poha in a colander, rinse gently and allow it to drain.
- Temper the spices. Heat oil and crackle mustard seeds. Add cumin, curry leaves and green chillies.
- Cook the potato. Add onion and sauté until soft. Add potato, cover and cook until tender.
- Combine. Add turmeric, salt and drained poha. Gently combine and cook on low heat for 2–3 minutes.
- Finish and serve. Add peanuts and sugar if desired. Turn off the heat and finish with lemon and coriander.
