These popular Indian potato patties are crisp outside, tender inside and made for generous spoonfuls of chutney.

- 4 medium potatoes, boiled and mashed
- 2 tbsp cornflour or breadcrumbs
- 2 tbsp finely chopped onion
- 2 green chillies
- 1 tsp grated ginger
- 2 tbsp fresh coriander
- 1 tsp chaat masala
- ½ tsp red chilli powder
- ½ tsp cumin powder
- Salt to taste
- 2–3 tbsp oil for shallow frying
Method
- Season the potatoes. Mix mashed potatoes with onion, chilli, ginger, coriander, chaat masala, chilli powder, cumin and salt.
- Bind and shape. Add cornflour or breadcrumbs. Divide into portions and shape into flattened patties.
- Heat the pan. Heat a thin layer of oil in a frying pan or tawa over medium heat.
- Shallow-fry. Cook tikkis until golden underneath, turn carefully and cook the other side until crisp.
- Serve. Serve immediately with green chutney, tamarind chutney or yoghurt.
